carrot cake
my friend judy makes this cake. it is packed with tasty ingredients. i made only a few chang
es and it tastes as wonderful as it always has! what’s up doc?
ingredients
1/2 cup................ pure olive oil
1/4 cup................ pure maple syrup
inch baking pan with olive oil
2 cups.................. brown sugar, packed
1 tablespoon........ honey
1 large ................. egg
3 large................. egg whites
2 1/2 cups............ flour
2 teaspoons ......... baking powder
1 teaspoon .......... baking soda
1 teaspoon............ salt
2 teaspoons.......... cinnamon
1/2 teaspoon......... nutmeg
1/2 teaspoon......... cloves
2 1/2 cups.............grated carrots
2 teaspoons.......... fresh lemon juice
2 teaspoons.......... pure vanilla extract
1 small can............ crushed pineapple,
about 1/2 cup , juice included
1 cup ................... pecans, finely, chopped
preparaion
1. preheat oven to 350° f. coat one 9x13-inch baking pan with olive oil
cooking spray.
2.in mixer bowl add olive oil. maplesyrup, brown sugar, honey, egg ,and
egg whites. mix until smooth and creamy.
3. add flour , baking powder, baking soda, salt, cinnamon, nutmeg, and
cloves . blend until well mixed.
4. add carrots. lemon juice, vanilla,pineapple, and chopped nuts. blend
again.
5. pour into prepared pan. bake for 55-60 minutes or until a knife
inserted into the center comes out clean. cool completely.
6. dust with powdered sugar or frost with basic cream cheese
frosting.
